Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 potatoes, diced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 6 cups vegetable broth
  • 1 (15 ounce) can cannellini beans, drained and rinsed
  • Salt and pepper, to taste

Directions

  1. 1. Add the onion, garlic, carrots, celery, potatoes, and zucchini. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
  2. 2. Add the oregano, basil, thyme, and red pepper flakes. Cook, stirring, for 1 minute.
  3. 3. Heat the olive oil in a large pot over medium heat.
  4. 4. Add the vegetable broth, tomatoes, and beans. Bring to a boil, then reduce the heat and simmer for 15 minutes.
  5. 5. Add the spinach and cook for an additional 5 minutes.
