Abstract

Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 potatoes, diced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 6 cups vegetable broth
- 1 (15 ounce) can cannellini beans, drained and rinsed
- Salt and pepper, to taste
Directions
- 1. Add the onion, garlic, carrots, celery, potatoes, and zucchini. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
- 2. Add the oregano, basil, thyme, and red pepper flakes. Cook, stirring, for 1 minute.
- 3. Heat the olive oil in a large pot over medium heat.
- 4. Add the vegetable broth, tomatoes, and beans. Bring to a boil, then reduce the heat and simmer for 15 minutes.
- 5. Add the spinach and cook for an additional 5 minutes.
- 6. Season with salt and pepper, to taste. Serve hot.
