Quinoa with tofu and veggies

Ingredients
- 1 avocado, diced
- 1 cucumber, diced
- 1/2 cup fresh cilantro, chopped
- 2 tomatoes, diced
- 200g firm tofu, cubed
- 1/4 red onion, finely chopped
- 1 cup quinoa
- 2 tablespoons olive oil
- Salt to taste
Directions
- 1. Cook quinoa according to package instructions. Let it cool.
- 2. Heat olive oil in a pan and sauté tofu cubes until golden brown.
- 3. In a large bowl, combine cooked quinoa, sautéed tofu, avocado, cucumber, cilantro, tomatoes, and red onion.
- 4. Season with salt and drizzle with more olive oil if desired.
- 5. Gently toss all ingredients until well mixed. Serve immediately.
