Quinoa with tofu and veggies

Ingredients

  • 1 avocado, diced
  • 1 cucumber, diced
  • 1/2 cup fresh cilantro, chopped
  • 2 tomatoes, diced
  • 200g firm tofu, cubed
  • 1/4 red onion, finely chopped
  • 1 cup quinoa
  • 2 tablespoons olive oil
  • Salt to taste

Directions

  1. 1. Cook quinoa according to package instructions. Let it cool.
  2. 2. Heat olive oil in a pan and sauté tofu cubes until golden brown.
  3. 3. In a large bowl, combine cooked quinoa, sautéed tofu, avocado, cucumber, cilantro, tomatoes, and red onion.
  4. 4. Season with salt and drizzle with more olive oil if desired.
  5. 5. Gently toss all ingredients until well mixed. Serve immediately.
