Vegan Couscous with Tofu

Ingredients

  • 1 onion
  • 2 tomatoes
  • 1 cup of couscous
  • 1 tsp garlic
  • 1/2 red bell pepper
  • 1/2 cup sun dried tomatoes
  • 1/2 cup black olives
  • 1 package of firm tofu

Directions

  1. 1. Chop the onion into small pieces.
  2. 2. Dice the tomatoes.
  3. 3. Prepare the couscous according to package instructions.
  4. 4. Mince the garlic.
  5. 5. Slice the red bell pepper into thin strips.
  6. 6. Chop the sun dried tomatoes into small pieces.
  7. 7. Pit the black olives and slice them in half.
  8. 8. Cut the firm tofu into cubes.
  9. 9. In a large pan, heat some oil over medium heat.
  10. 10. Add the chopped onion to the pan and sauté until translucent.
  11. 11. Add the minced garlic and sauté for another minute.
  12. 12. Add the sliced red bell pepper, diced tomatoes, chopped sun dried tomatoes, and halved black olives to the pan. Cook for a few minutes until the vegetables are slightly softened.
  13. 13. Add the cubed firm tofu to the pan and cook for another 2-3 minutes to heat through.
  14. 14. Finally, add the cooked couscous to the pan and mix everything together until well combined.
  15. 15. Cook and mix everything up for a few minutes until the flavors are well incorporated.
  16. 16. Remove from heat and serve the vegan couscous warm.
