Vegan Couscous with Tofu

Ingredients
- 1 onion
- 2 tomatoes
- 1 cup of couscous
- 1 tsp garlic
- 1/2 red bell pepper
- 1/2 cup sun dried tomatoes
- 1/2 cup black olives
- 1 package of firm tofu
Directions
- 1. Chop the onion into small pieces.
- 2. Dice the tomatoes.
- 3. Prepare the couscous according to package instructions.
- 4. Mince the garlic.
- 5. Slice the red bell pepper into thin strips.
- 6. Chop the sun dried tomatoes into small pieces.
- 7. Pit the black olives and slice them in half.
- 8. Cut the firm tofu into cubes.
- 9. In a large pan, heat some oil over medium heat.
- 10. Add the chopped onion to the pan and sauté until translucent.
- 11. Add the minced garlic and sauté for another minute.
- 12. Add the sliced red bell pepper, diced tomatoes, chopped sun dried tomatoes, and halved black olives to the pan. Cook for a few minutes until the vegetables are slightly softened.
- 13. Add the cubed firm tofu to the pan and cook for another 2-3 minutes to heat through.
- 14. Finally, add the cooked couscous to the pan and mix everything together until well combined.
- 15. Cook and mix everything up for a few minutes until the flavors are well incorporated.
- 16. Remove from heat and serve the vegan couscous warm.
