Ingredients
- 1 1/2 cups oat flour
- 1/4 teaspoon salt
- 1/4 cup cold water
- 1 zucchini, sliced
- 1 carrot, grated
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red pepper, diced
- 3 eggs
- 1/2 cup cashew mozzarella cheese or any cheese
Directions
- 1. Preheat oven to 350°F (175°C).
- 2. Mix oat flour, salt, and cold water to form a dough.
- 3. Press dough into a tart pan and bake for 15 minutes.
- 4. In a pan, sauté onions and garlic until translucent.
- 5. Add carrots, zucchini, and red pepper, cook until tender.
- 6. Beat eggs and mix with cooked vegetables and cheese.
- 7. Pour vegetable mixture into the pre-baked crust.
- 8. Bake in oven for an additional 5 minutes.
- 9. Remove from oven, let it cool slightly, then serve.
