Ingredients

  • 1 1/2 cups oat flour
  • 1/4 teaspoon salt
  • 1/4 cup cold water
  • 1 zucchini, sliced
  • 1 carrot, grated
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red pepper, diced
  • 3 eggs
  • 1/2 cup cashew mozzarella cheese or any cheese

Directions

  1. 1. Preheat oven to 350°F (175°C).
  2. 2. Mix oat flour, salt, and cold water to form a dough.
  3. 3. Press dough into a tart pan and bake for 15 minutes.
  4. 4. In a pan, sauté onions and garlic until translucent.
  5. 5. Add carrots, zucchini, and red pepper, cook until tender.
  6. 6. Beat eggs and mix with cooked vegetables and cheese.
  7. 7. Pour vegetable mixture into the pre-baked crust.
  8. 8. Bake in oven for an additional 5 minutes.
  9. 9. Remove from oven, let it cool slightly, then serve.
